# What You'll Need:

→ Pastry

01 - 2 sheets (17.6 oz) ready-made puff pastry, thawed if frozen
02 - 1 egg, beaten (for egg wash)

→ Apple Filling

03 - 2 medium apples, peeled, cored, and diced
04 - 2 tablespoons granulated sugar
05 - 1 tablespoon brown sugar
06 - 1/2 teaspoon ground cinnamon
07 - 1/4 teaspoon ground nutmeg
08 - 1 teaspoon lemon juice
09 - 1 teaspoon cornstarch

→ Decoration (Optional)

10 - Pearl sugar or coarse sanding sugar
11 - Icing (powdered sugar mixed with a small amount of milk)

# How to Make It:

01 - Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
02 - In a medium bowl, combine diced apples with granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Set aside to macerate.
03 - On a lightly floured surface, roll out puff pastry sheets and cut 16 mitten shapes using a cookie cutter or template and a sharp knife.
04 - Place 8 pastry mittens on the prepared baking sheet. Spoon a heaping tablespoon of apple filling onto each, leaving a border around the edges.
05 - Brush the pastry edges with beaten egg, top each with a second pastry mitten, and gently press edges with a fork to seal.
06 - Brush the tops with egg wash. Optionally, sprinkle with pearl or coarse sanding sugar for added texture.
07 - Make a small vent on the top of each pie using a knife to allow steam to escape while baking.
08 - Bake for 20 to 22 minutes until golden brown and puffed.
09 - Allow pies to cool slightly. If desired, drizzle with icing for decoration before serving.
