# How to Make It:
01 - Wash cucumbers and green onions. Thinly slice the cucumbers (peel if desired) and slice the green onions; transfer to a large mixing bowl and, if cucumbers are especially wet, blot gently with a paper towel.
02 - In a separate bowl, whisk together the Greek yogurt or sour cream, mayonnaise, lemon juice, Dijon mustard, minced garlic, rice vinegar, kosher salt and black pepper until smooth and slightly glossy; taste and adjust seasoning as needed.
03 - Pour the dressing over the sliced cucumbers and green onions and toss gently with a large spoon or salad tongs to ensure even coating without crushing the slices.
04 - Sprinkle the everything bagel seasoning over the dressed vegetables and fold lightly to distribute the seeds and aromatics while retaining some crunchy texture.
05 - Garnish with chopped dill if using. Serve immediately for maximum crispness or chill in the refrigerator for about 10 minutes to allow flavors to meld before serving.
