# How to Make It:
01 - Preheat the oven to 350°F. Line two baking sheets with parchment paper or use ungreased nonstick sheets.
02 - In a large bowl, beat the butter and sugar together until light and fluffy, approximately 2 to 3 minutes.
03 - Add the egg, vanilla extract, and almond extract if using, and beat until fully combined.
04 - Gradually mix in the flour and salt just until incorporated, being careful not to overmix.
05 - Fit a cookie press with a fan or star-shaped disc and fill with dough.
06 - Press cookies directly onto the prepared baking sheets, overlapping bases slightly to form clusters of 3 to 4 cookies in a fan shape.
07 - Sprinkle colored sanding sugar or sprinkles over the cookies if desired.
08 - Bake for 9 to 11 minutes until edges just begin to turn golden brown.
09 - Allow cookies to cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
10 - Once cooled, drizzle melted chocolate over cookies if desired and allow to set before serving.
