01 - 7 oz beef sirloin or flank steak
02 - 1 tbsp olive oil
03 - 1 tsp gluten-free soy sauce
04 - Salt and freshly ground black pepper, to taste

→ Vegetables & Greens

05 - 1 medium sweet potato, peeled and diced (about 7 oz)
06 - 1 tbsp olive oil
07 - 1 ripe avocado, sliced
08 - 2 cups mixed salad greens (spinach, arugula, romaine)
09 - 4 cherry tomatoes, halved
10 - 2 radishes, thinly sliced (optional)

→ Eggs

11 - 2 large eggs

→ Dressing

12 - 1 tbsp Greek yogurt
13 - 1 tbsp lemon juice
14 - 1 tsp Dijon mustard
15 - 1 tsp honey
16 - Salt and pepper, to taste

# How to Make It:

01 - Set the oven to 400°F (200°C) to prepare for roasting the sweet potato.
02 - Toss the diced sweet potato with 1 tablespoon of olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 20 to 25 minutes until tender and golden.
03 - Rub the beef with 1 tablespoon olive oil, soy sauce, salt, and pepper. Heat a grill pan or skillet over medium-high heat and sear the beef for 2 to 3 minutes per side for medium-rare. Allow it to rest before slicing thinly.
04 - Bring a small saucepan of water to a simmer. Gently lower in the eggs and cook for 7 minutes for jammy yolks. Cool under cold running water, peel, and halve.
05 - Whisk together Greek yogurt, lemon juice, Dijon mustard, honey, salt, and pepper in a small bowl until smooth.
06 - Divide mixed greens between two bowls. Arrange roasted sweet potato, avocado slices, cherry tomatoes, radishes if using, sliced beef, and halved eggs on top. Drizzle with dressing.
07 - Serve immediately, optionally garnishing with fresh herbs for added flavor and presentation.

# Expert Advice:

01 -
  • It comes together faster than you'd expect, with most of the work happening hands-off in the oven while you tend to everything else.
  • Every component stays vibrant and distinct, so you get different textures and flavors in every bite instead of a mushy, monochromatic mess.
  • The protein keeps you satisfied for hours, and you'll actually feel the difference in your energy and focus by mid-afternoon.
02 -
  • Avocado darkens quickly once sliced, so prepare everything else first and add it only as you're assembling—those two minutes make a visible difference in how fresh it looks.
  • The egg yolk is what makes this bowl feel luxurious instead of like a salad, so don't skip the soft-boil step or cook them fully; the running yolk is the whole point.
03 -
  • Dice your sweet potato smaller than you think you need to because larger pieces stay firm in the middle while the edges burn—uniform small pieces get consistently golden.
  • Slice your beef slightly thicker than you'd think necessary, then cut against the grain; this makes it tender in your mouth instead of stringy between your teeth.
